Grandma Marie's Italian Ricotta Cookies

Grandma Marie's Italian Ricotta Cookie Recipe | Voyager's Table

While this cookie is traditionally made by my Grandma Marie at Christmas time, these are just as tasty all year round!

The ricotta helps keep these cookies nice and moist, and the light icing adds a little extra sweetness.

  • 1/2 cup unsalted butter
  • 1/4-1/2 cup ricotta
  • 1 tsp vanilla
  • 3/4 cup sugar
  • 1 egg
  • 2 cups sifted all purpose (plain) flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • Rainbow spinkles
  • Icing – milk + powdered sugar

  1. Preheat oven to 350 Fahrenheit / 175 Celsius
  2. In a small separate bowl, mix dry ingredients - 2 cups flour + 1/2 tsp baking soda + 1/2 tsp salt
  3. Soften 1/2 cup butter (you can pop it in the microwave for 15-30 sec, depending on how hot it gets!)
  4. Blend butter and ricotta until creamy
  5. Add 1 tsp vanilla and mix well
  6. Gradually add 3/4 cup sugar
  7. Add egg and mix well
  8. Slowly (and gradually) stir in dry ingredients - by the end, it'll feel like an arm workout
  9. Plop onto baking sheet
  10. Bake for approx. 10 minutes
  11. While baking, mix a few dashes of milk with a dash of powdered sugar - it will be a pretty thing consistency
  12. Once cookies are cool enough to touch, with a pastry brush apply the 'icing' and add sprinkle
  13. Tough to beat if consumed hot and fresh out the oven!
